Easy, Healthy, QUICK Cauliflower Dinner Recipe!

Instead of picking up takeout Thai food on the way home (which is what I wanted – to enjoy a delicious meal and unplug from a long day), I made an easy, (much healthier) cauliflower dinner that satisfied in about 10 minutes.

Lightly steam one head cauliflower.

Add the following:

  • 2 tablespoons sun-dried tomatoes in oil
  • One large tablespoon pesto
  • Juice of one Lemon
  • One spoonful spicy chopped peppers (for more flavor, a little kick, and to avoid salt)
  • Small handful of chopped olives

Serve and sprinkle with Parmesan cheese and lots of cracked pepper.

Easy. All done from jars stocked in the refrigerator.
