Instead of picking up takeout Thai food on the way home (which is what I wanted – to enjoy a delicious meal and unplug from a long day), I made an easy, (much healthier) cauliflower dinner that satisfied in about 10 minutes.
Lightly steam one head cauliflower.
Add the following:
- 2 tablespoons sun-dried tomatoes in oil
- One large tablespoon pesto
- Juice of one Lemon
- One spoonful spicy chopped peppers (for more flavor, a little kick, and to avoid salt)
- Small handful of chopped olives
Serve and sprinkle with Parmesan cheese and lots of cracked pepper.
Easy. All done from jars stocked in the refrigerator.
