RECIPE | Raw Fennel & Orange Salad
Scene: visiting family. Beautiful Saturday. The text comes in, “Hey girlfriends, who wants to gather for a potluck and then go shake it?”
Text messages fly back and forth…. 3 of the 4 core are free and agree to meet… Fast forward mid-afternoon: make something Delicious and healthy…. But what about if you don’t want to go to the store on a beautiful Saturday?
Shred in Cuisinart (or chop):
- 1 fennel bulb shredded
- 1/2 an onion
- 1 red pepper
- 2 yellow summer squash (I changed the Cuisinart blade from shredding to slicing, for variety and interest in the sizes of the veggies)
- 2 clementines – peeled cut in half and then open pieces.
2 big tablespoons sun-dried tomato and oil
1 big tablespoon large capers
I happened to have Tomatillos from Bartlett’s Pick your own Tomatoes Day!
- Soy Sauce or Liquid Aminos (tastes like soy sauce, but wheat & sodium free)
- Rice vinegar
- Splash of Balsamic Vinegar (for sweetness)
- Olive Oil
- Sea Salt
Top with Toasted Pepitas (Pumpkin Seeds – or Sunflower Seeds) before serving
